My Great Food 15-Sec Cooking Challenge



If I could write a definition for summer in the dictionary, it'd be good food, good people, and good places.  Which is why I'm typing this from my quaint little apartment in Italy!.. not. Okay so I'm not exactly vacationing in the summer isles, or roaming around the cobblestoned steps of Rome on a Vespa with Paolo Valisari ala Lizzie McGuire, I'm channelling my inner Italian by inventing summer-inspired dishes. I mean, if I can't go to Europe, might as well bring the idyllic Sicilian summer to Manila.  





When I was eleven, I tried to read Mario Puzo's The Godfather in a vain attempt to feel more intellectual and substantial. I never finished it. Rejected and dejected by a great piece of Italian literature (or so they say), I wrapped myself in a nice, warm blanket and found comfort in the next best thing - Italian cuisine! More specifically, pizza, also known as The Food I Can Eat Everyday For The Rest Of My Life. So for the My Great Food In 15 Seconds Challenge, I decided to make pizza with a twist.  


Ta-da! This is the pizza, around 75% done. I'm not the most industrious house elf when it comes to cooking but pizza is extremely easy to make, you don't have to be Iron Chef material to get it right. Just a couple of toppings here and there, toast or bake it, and you're done! It's the ultimate summer merienda, ideal for lazing around by the ocean, while sipping some mango shake, good book in hand. 

Since this is a summer-inspired pizza, I decided to make some creative changes to the typical tomato - pepperoni - cheese combo. Pizza is known for being chockfull of carbs so I used whole wheat pita as the base dough. You know, to preserve that Boracay ready body I don't actually have. HAHAHA. I also replaced pepperoni with something a little more creative - Purefoods Corned Beef and Tender Juicy Hotdog! My favorite breakfast food is actually corned beef with potatoes or red hotdog with lots of banana ketchup, so I incorporated it into my pita pizza because why on Earth not. I would have included some Purefoods Honeycured Bacon as well but that stuff gets consumed faster than lightning in this house, hahaha! (I don't care if bacon isn't the healthiest thing in the world; besides, it's the thought that counts! The whole wheat pita cancels it out. Of course.)



You Will Need:

1 pc. Whole Wheat Pita 
3 tbsp. Tomato Sauce 
Purefoods Corned Beef, cooked
Purefoods Tender Juice Hotdog, sliced
Red bell pepper, chopped
Onions, chopped
Mushrooms
Basil Leaves
Cheese
Salt & Pepper to taste
1 Egg
Oven / Oven Toaster

Directions: 
1. Chop the onions, red bell pepper and Purefoods Tender Juicy Hotdog. 
2. Fry the Purefoods Corned Beef. 
3. Layer the pizza. Add the tomato sauce, corned beef, hotdog, 
onions, bell pepper, mushrooms and basil leaves. Grate some cheese.
4. Pop the pizza in the toaster oven until it's half-cooked. 
5. Remove the pizza from the oven and crack an egg on top of the pizza. 
Pop it back in the toaster oven until completely cooked. 




So what did it taste like? It was crispy on the edges, but so juicy because of the cheese and tomato sauce! The onions, bell pepper and cheese mixed in with the egg, corned beef and hotdog blended SO well together, it was like a symphony of savory flavors in my mouth. I wish you could grab the pizza from your computer/phone/tablet screen like they did in Charlie and the Chocolate Factory but you'll just have to cook it yourself to know just how good it was!

Life in 4x4

December so far has been messy - quite literally, as we've been doing a lot of spring (or winter?) cleaning at home. Rainy School Days

I don't know what it is about school lately but every week's more dull than the last. Maybe I'm just exhausted from the everyday grind. 

Simple

With one term left before I graduate and the million and one chips making themselves comfortable on my shoulder, I am thisclose to melting into a puddle of feelings (freshly squeezed from fresh tears).
